7/3/2010 – Fattie

After reading about fatties and seeing pics posted around, my curiosity overtook my common sense, and I decided to give one a try.

  • 1 lb thick-cut bacon
  • 1 lb breakfast sausage
  • 1 red bell pepper, sauteed
  • Country-style hash browns, browned
  • 2 scrambled eggs
  • BBQ rub

I made the lattice with the bacon and covered it with sausage.  Sprinkled on some rub and added the filling.  In retrospect I probably added too much filling as I had to use tooth picks to keep it closed.  Cooked it at 300 for 2 hours with Mesquite.

Other fillings I would have liked to include would have been sauteed onions, garlic, and cheese.  Maybe next time if I survive eating this one…
