6/6/2010 – Beef Jerky
My first attempt at Beef Jerky. Didn’t have any curing salts, but used salt and brown sugar. This will be gone in a couple days so I’m not too worried. Next time I’ll get the proper curing salts and try a different recipe.
I marinated the sliced sirloin in a marinade of water, sea salt, brown sugar, Worcestershire sauce, liquid smoke, garlic, pepper, and a couple of chopped jalapeno peppers. Smoked this with Bear Mountain Mesquite pellets for about 7.5 hours.
Came out a little saltier than I would like. But I did find a great e-book of jerky recipes (free) at http://www.befjerkyrecipes.com that I will try on future attempts.
